Ingredients

  • all-purpose flour (1.25 cup)
  • honey (4 tablespoon) - For drizzling over the pancakes.
  • chocolate chips (0.5 cup)
  • vanilla extract (1 teaspoon)
  • melted unsalted butter (3 tablespoon) - Plus extra for greasing the pan.
  • large egg (1 )
  • pumpkin puree (0.5 cup)
  • milk (1 cup) - Use any type of milk you prefer.
  • salt (0.25 teaspoon)
  • pumpkin pie spice (1 teaspoon)
  • baking powder (1.5 teaspoon)

Instructions

Prepare the batter

  • In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt.
  • In another bowl, mix the milk, pumpkin puree, egg, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
  • Fold in the chocolate chips gently.

Cook the pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with a bit of butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown on both sides and cooked through.
  • Repeat with the remaining batter.

Serve

  • Stack the pancakes on serving plates.
  • Drizzle honey generously over the pancakes.
  • Serve immediately, optionally adding extra toppings like nuts or whipped cream.

Tips

  • Ensure to use pure pumpkin puree and not pumpkin pie filling to avoid additional sweeteners and spices.
  • If you prefer a stronger chocolate flavor, use chocolate chunks instead of chips.
  • For a nutty twist, add a handful of chopped pecans or walnuts to the batter.
  • You can substitute half of the all-purpose flour with whole wheat flour for a healthier option.
  • To keep pancakes warm while cooking the remaining batter, place them on a baking sheet in a 200°F oven.
