Ingredients

  • puff pastry (1 sheets) - thawed if using frozen
  • chopped chives (1 tablespoons) - for garnish
  • freshly ground black pepper (0.25 teaspoons)
  • salt (0.5 teaspoons)
  • butter (1 tablespoons) - unsalted
  • sriracha sauce (2 tablespoons)
  • zested and juiced lemon (1 )
  • ricotta cheese (0.5 cups) - smooth and creamy texture preferred
  • eggs (3 ) - room temperature

Instructions

Prepare the Puff Pastry

  • Preheat your oven to 400°F (200°C).
  • Roll out the puff pastry on a lightly floured surface to smoothen any folds.
  • Cut the puff pastry into 4 equal squares.

Bake the Pastry

  • Place pastry squares on a baking sheet lined with parchment paper.
  • Use a knife to score a smaller square within each pastry, about 1 inch from the edge. Don’t cut all the way through.
  • Bake in the oven for 15 minutes or until golden brown and puffed.
  • Remove from the oven and let cool.

Prepare the Lemon Ricotta

  • In a small bowl, mix the ricotta cheese, lemon zest, and lemon juice until smooth.
  • Season with a pinch of salt and pepper.

Cook the Eggs

  • In a small pan, melt butter over medium heat.
  • Whisk eggs with the remaining salt and pepper and pour into the pan.
  • Stir gently with a spatula until eggs are cooked but still soft, about 3 minutes.
  • Remove from heat.

Assemble the Tarts

  • Press down the center of each baked puff pastry square with a spoon to create a small cavity.
  • Spread an even layer of lemon ricotta mixture into the cavity of each tart.
  • Top with scrambled eggs.
  • Drizzle with sriracha sauce.
  • Garnish with chopped chives.

Finalize and Serve

  • Arrange tarts on a serving platter or individual plates.
