Ingredients

  • sliced and caramelized onion (1 medium)
  • reduced sodium beef broth (500 milliliters) - Homemade or boxed is fine.
  • minced garlic (2 cloves) - Adjust to your preferred level of garlic flavor.
  • soy sauce (1 tablespoons)
  • olive oil (1 tablespoons)
  • butter (1 tablespoons)
  • thinly sliced roast beef (250 grams) - Use quality roast beef, either store-bought or homemade.
  • halved and toasted baguette (1 loaf) - Choose a crusty, fresh baguette for best results.
  • provolone cheese (4 slices) - Any mild melting cheese can work as a substitute.

Instructions

Prepare the Au Jus

  • In a small saucepan, heat olive oil over medium heat and add minced garlic. Sauté for 1 minute until fragrant.
  • Pour in beef broth and soy sauce. Bring to a simmer, then reduce the heat and let it gently simmer while you prepare the sandwich.

Caramelize the Onions

  • In a skillet, melt butter over medium heat.
  • Add the sliced onions and cook, stirring often, until they are golden brown and caramelized, about 10 minutes.

Assemble and Bake the Sandwich

  • Preheat the oven to 180°C (350°F).
  • Place the bottom half of the toasted baguette on a baking tray.
  • Layer the caramelized onions, sliced roast beef, and provolone cheese evenly over it.
  • Cover with the top half of the baguette.
  • Bake in the preheated oven for about 10 minutes, or until the cheese is melted and the sandwich is heated through.

Prepare to Serve

  • Transfer the sandwich to a cutting board and slice it into desired serving sizes.
  • Pour the prepared au jus into small serving bowls.

Tips

  • Ensure the roast beef is thinly sliced for optimal tenderness.
  • If crusty baguettes are not available, use a sturdy roll or bread to hold up to dipping.
  • For extra flavor, you can add a sprig of thyme or a dash of Worcestershire sauce to the au jus.
  • If you prefer a spicier kick, add a hint of horseradish sauce inside the sandwich.
  • Caramelizing the onions slowly ensures a deep, sweet flavor that complements the sandwich.
