extra-virgin olive oil(1 tablespoons)

Instructions
Make the pasta dough
In a large bowl, combine 1 cup of all-purpose flour, a beaten egg, salt, and extra-virgin olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Prepare the ravioli
Roll out the dough into a thin sheet using a pasta machine or rolling pin.
Cut the dough into evenly sized squares, around 3 inches each.
Place a small spoonful of cookie dough in the center of half the squares.
Brush the edges of each square with a little water, then place another square on top, pressing the edges to seal and form a ravioli. Repeat with remaining dough.
Cook the ravioli
Bring a pot of water to a boil and add a pinch of salt.
Gently add the ravioli to the boiling water and cook for about 3-4 minutes until they float to the surface.
Remove them with a slotted spoon and set aside on a plate lined with a paper towel.
Make the chocolate sauce
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
Add the chopped dark chocolate to the pan and stir until melted and smooth.
Remove from heat and set aside to cool slightly.
Serve
Place the freshly cooked ravioli on a serving plate.
Drizzle generously with the chocolate sauce.
Garnish with a dusting of powdered sugar and a sprig of fresh mint.
Serve immediately.
Tips
Ensure that your prepared cookie dough is chilled before filling the ravioli; this helps maintain the shape during assembly and cooking.
When sealing the ravioli, ensure that there are no air bubbles trapped inside as they can cause the ravioli to burst during cooking.
A pasta cutter or ravioli mold can be helpful in achieving evenly shaped ravioli.
For a slightly crunchy texture, consider lightly pan-frying the ravioli in a little butter after boiling, before adding the chocolate sauce.
Feel free to experiment with different flavored cookie dough or fillings, such as adding nuts or bits of brownie for added texture.
